For the pasta
200g 00 flour
2 eggs
½ tbsp olive oil
50g coarse semolina, for cutting and storing
Extra 00 flour, for dusting
For the sauce
1 tbsp olive oil
200g baby spinach
2 cloves garlic crushed
20g grated parmesan
50ml chicken or vegetable stock
4 free-range fresh egg yolks
