2 medium courgettes
150g green beans
100g (frozen) peas
½ red chilli, finely diced
1 small bunch of mint, leaves chiffonade
1 small bunch of parsley, leaves chopped
1 lemon, zested and juiced
125g artichokes in oil, cut into quarters
3 tbsp extra virgin olive oil
Salt and pepper, to season
Honey, to taste
Ice, for blanching and refreshing
